my position on food

I have always loved food.  My love of eating and creating food has only been enriched through my pursuit of nutritional knowledge.   I took a course in college, during my sophomore year, concerning nutrition and health.  This was really the first place that I learned about the ins and outs of what we consume. Down to the minerals, vitamins, protiens and so forth that our bodies require to survive and be healthy.  My pursuit for nutritional knowledge is an ongoing process, I would love for this to be something I always find interesting, as well as pertinent.

My interest in food began at the age of 13, when I decided that I didn't like meat enough to continue eating it, so I chose to become a vegetarian.  When I decided to become a vegetarian I was forced to find new ways of acquiring my nutritional needs.   I had to learn about alternative sources of protein, B12, healthy fats, and so forth.   My rationalization for becoming a vegetarian was based on the fact that I simply disliked the taste of meat; it was too tough, too stringy, too fatty, irony, gristly, etc.  Thus, I announced this my family, on a summer day some twelve-years ago...

I have since learned about factory farming methods, genetically modified crops, hormone-infused meats and dairy products, preemptive antibiotic treatment of animals for human consumption, pesticides and so forth... Through this knowledge I have developed rules to live by when it comes to my food.   Such as eating organic whenever possible.  Getting enough protein through various foods (quinoa, beans, dairy).  Since I do not eat meat, I have to make a point to get enough B-12 through supplements and dairy products.  I also supplement my omega-3's.   I also buy local eggs, eggs from hens who have been humanely raised and are not cooped up in tiny cages all day.  Free hens make better eggs!   When I buy meat for my husband I only buy locally raised meat that has been humanely raised without the use of antibiotics or hormones. Above all, I always make sure to keep it fun, exciting, delicious and nutritious!

I prefer to eat at home.  My husband and I enjoy making our own food from scratch - to me it simply tastes better. I enjoy testing out new recipes, many of which I will share here on this blog.   I will also share tidbits of interesting nutritional information that I dig up while on my studies.  The core component of this blog will be food, however sometimes I will share information that I find informative, fascinating and fun!

Next time I will share one of my favorite recipes!  So stay tuned!
