Something to warm these cold winter nights

It's been getting a lot colder in recent days, I guess we've been pretty lucky to have had such a mild start to winter. However the past few nights have reached single digits and it is time to start making food to warm the body and the soul!  So I decided to try my hand at some soup. Soups are always fun because you can really experiment with tons of ingredients!

I used to be terrified of making soups. Making soup always seemed so complicated to me and I thought that there was a very finite set of ingredients and techniques required in order for a great tasting soup to result. In recent years I have challenged my fear head-on and decided to experiment around with making some soups. At first I followed various recipes to a tee, however I soon realized that soup making was not so difficult!  Some of my favorite soups are butternut squash and coconut milk, vegan "cream" of mushroom and vegetable medley.

Any who, here is a soup I threw together the other night, it turned out really tasty.  I wanted to share it with you and perhaps you will try it out, or even better perhaps you too will experiment with making soups, because it can be really fun, fulfilling and yummy!

I used one celery heart, about 5 medium sized carrots, an onion, a bunch of kale, some vegan bouillon, and of course pasta!  I used gemelli pasta, but any kind would do great I think.





 After dicing up my onion, celery, and carrots I proceeded to saute them all in a bit of olive oil.  After the veggies were slightly soft I added about 9 cups of water and 5 bouillon cubes.  Let the mixture simmer a few minutes, allowing the bouillon to dissolve.  Add some salt if your bouillon is unsalted!


Add the noodles, about 1/2 of the package.  Allow this to simmer another few minutes, then toss in your washed and chopped kale.  Mix and cover the pot with the lid.  Allow to simmer at low heat for at least 15 minutes.  When the noodles are soft you can add extra seasoning, salt & pepper



We ate soup leftovers for about 3 days!  It was absolutely delish and very hearty.  Hope you enjoy!
